Salad is the best type of healthy food available and can be delectable at the same time, low in calories and nutritious it helps to keep the diet in check. But there is wrong notion that salad is a bunch of raw or boiled vegetables which lacks in taste and can’t be a meal but there are variety of salad preparations to choose from which are both tasty and healthy. Here is a list of some appetizing salad recipes which is easy to prepare.
Methi or Fenugreek Salad
This is spicy and combination of sweet and sour salad that can easily lighten up the taste buds.
Ingredients
- 1 bunch of fenugreek or methi seeds
- 3 to 4 Walnuts
- 5 to 6 raisins
- 3 teaspoon of sesame seeds
- 1 teaspoon of olive oil
- A pinch of hing
- ½ teaspoon of mustard seeds
- ½ teaspoon of honey or jaggery syrup
- Lemon juice and salt to taste
Method of preparation
Put the pan on the heat, add some oil and bring to boil and then add the mustard seeds and let it crackle and followed by the hing, let it cool, once cooled add lemon, honey and salt to taste and let it in the refrigerator and allow it to chill. Add the remaining walnuts, raisins and sesame seeds in the washed and dried methi leaves mix it well with the chilled filling and serve.
Lettuce Wraps or Lettuce rolls
Ingredients
- 100 grams of chopped lettuce
- 100 Grams each of finely chopped, green, yellow and red capsicums
- 50 grams each of corn and crumbled ‘Paneer’(cottage cheese)
- 60 grams of finely chopped pineapple
- 1 tea spoon each of vinegar and Virgin Olive oil
- ½ tea spoon of green chili paste
- 2 tea spoon of soya sauce
- Salt to taste
Method of Preparation
Add the olive oil and bring the pan to boil, allow the finely chopped green, red and Capsicums with corn brew for 5 minutes. Add the remaining ingredients after mixing everything add the mixture, roll it in the Lettuce leaves and serve.
Vegetable Salad
Ingredients
- 2 cups of mixed vegetables
- 1 tea spoon each of roasted ‘jeera’(cumin) powder and jaggery powder
- ½ tea spoon of red chili powder
- 1 green capsicum
- 3 to 4 tablespoon of roasted peanut powder
- ¼ tea spoon of lemon juice
- Salt to taste
Method of Preparation
Boil all the vegetables and add the jeera (cumin) powder, chili powder, capsicum, roasted peanut powder, lemon juice and salt to taste, mix well and serve it chilled
Water Chestnut or Singhara and Pomegranate Salad
Ingredients
- 100 grams of Pomegranate seeds
- 250 grams of water chestnut
- ½ tea spoon of powdered pepper
- ¼ tea spoon of hing
- 1 tea spoon of extra virgin olive oil
- Salt to taste
Method of Preparation
Heat the pan and bring the olive oil to boil add hing, water chestnut, brew it for some time add the pepper and salt to taste, add the pomegranate to the chilled salad and serve.
French beans Salad
Ingredients
- 100 grams of French beans
- 1 Tea spoon each of balsamic vinegar, green chili paste and soya sauce
- 1 table spoon roasted sesame seeds
- ½ tea spoon of extra virgin olive oil
- 2 to 3 pods of finely chopped garlic
- Salt to taste
Method of Preparation
Heat the pan and bring the olive to a boil, brew the finely chopped garlic with the French beans for some time. Add the remaining ingredients mix well and serve hot.
